  |     |   Apartment Living Canoga Park

If you are an expert at cooking Thanksgiving meals and this year isn’t your first time hosting, then you might be searching for a few ways to spice up the meal. Thanksgiving is great, but the dishes can be a bit repetitive and standard–mashed potatoes, corn, mac & cheese. Well, let’s spice up your side dishes with an excellent bacon hasselback potato recipe.

Ingredients
4 slices of bacon, cut into 9 smaller pieces
12 medium potatoes
1 stick of butter
Sea salt

Pepper
2 diced scallions

2 tablespoons of chopped parsley

Kosher salt
1 clove of chopped garlic

Put your pieces of bacon on a sheet pan and then place in the freezer for about 30 minutes. Place your peeled potatoes in a pot of salted water and let it boil. Prior to boiling, cut the potatoes in slices but do not cut the entire way, The potato must still be intact. Cook for about five minutes after it begins to boil.

Next dry the potato and place the frozen pieces of bacon into the cut slots. Brush with butter and season the potatoes to your taste. Now put them in the oven at 350 degrees and let them cook for another hour and a half.

Next melt 3 tablespoons butter, mix with the scallions, parsley and garlic and pore over the potatoes during the last five minutes of cooking. Now serve and enjoy.
